Zuppa Toscana Soup

This is so delicious!!!! This is one of my all time favorite soups! There are a lot of recipes out there for this soup but I always put my own twist on things once I find a taste that I like:) I hope you enjoy this  as much as I enjoyed making it!! xo

~ 6 cups of  chicken stock

~ 1 1/2 cups of pastured cream

~ 3/4 sick of  salted pastured butter

~ 4/5 long stemmed chopped carrots

~ 3 cups of finely chopped collard greens

~ 1 leek or yellow onion diced fine

~4 cloves of garlic

~1 pound of grass fed ground beef( brown in pan before adding to soup)

~3 large potatoes chopped into small cubes

~1 tsp of salt( add more to taste if you like)

~1 tsp of pepper

~1 tbsp of fennel seed ( or more to taste)

~1 tbsp. of fresh parsley diced fine

~1 tsp of oregano

~1/4 tsp of paprika

~1 tsp of onion powder( adds extra flavor)

~1 tsp of garlic powder(adds extra flavor)

Brown Ground beef in a pan. Add all other ingredients into a large soup pot or crockpot. Leave out the cream and butter. Once veggies are cooked add cream and  butter until melted. So yummy!!!!! Enjoy!! XO
