
Sweet potato mash with Kale.
BBQ meatballs.
Meatballs are a perfect dish to freeze. This is one of my go to dishes for entertaining. Serve with a side salad. It’s a perfect Fall comfort food!
Sweet potato Mash:
3 large sweet potatoes
2 handfuls of fresh cut kale-no stem
1/2 of yellow onion
2 cloves of garlic
celtic sea salt
pepper
1tbsp of rosemary
expeller pressed Coconut oil
grass fed butter
Place all ingredients in large dish and mix expeller pressed coconut oil all over potatoes. Sprinkle Salt and Pepper. Cut up a couple cubes of Grass Fed butter and place on top. Bake on 375 for 45 minutes to an hour.
BBQ Meatballs:
1 pound of Grass Fed ground beef or ground Turkey
1/2 yellow onion-finely chopped
3/4 cup of Gluten Free Oats
2 tbsp of Almond milk or Coconut Milk
1 teaspoon of pepper
1 teaspoon of salt
almond flour
BBQ Sauce
Scoop a spoonful of meat mixture and roll in Almond flour. Brown all sides in expeller pressed coconut oil and place in Baking dish. Drizzle BBQ sauce all over and bake at 375 for 45 minutes.
