Hi Everyone!! I’m back with some more recipes! These days juggling a new website, two toddlers, and my practice, it’s all about fast, healthy and delicious!! I made this recipe up one day when I had two jars of salsa sitting all by it’s lonesome. I have to make things in my household that can accomidate my kids and my husband. I am always making things that are versatile. One likes one thing, the other likes another… it’s exhausting ( lol) … I should say eat this or starve but I’m not that tough … yet!! ha!
Anyways, back to my recipe. All you need is…
~ 2 jars of organic salsa. You can use any kind you like and any flavor.
~ 4 boneless skinless chx breast
~ 2 red peppers chopped( or yellow/orange)
~ 1 whole yellow onion diced
~3 cloves of garlic minced
~ 1 large handful of cilantro chopped
~ juice of two limes
~ 1 tsp of celtic sea salt
~ 1 tsp of pepper
Stick all ingredients in slow cooker. Cook 4-6 hours on low/med. Serve over Brown rice, salad… the possibilities are endless!!
