Simple Kale Salad with Citrus orange Dressing!

I love salad!! I could eat a salad at every meal. It’s loaded with vitamins and minerals, and has tons of good wholesome fiber. I love my Balsamic dressing, but I wanted to change it up a bit, and add a different citrus flavor to the Kale.  You can add any kind of veggie or meat to the dish, but I ate this plain because I was in a pinch, and didn’t feel like adding anything else!

All you need is some Good ole chopped red kale, raw sunflower seeds, and this AMAZING  light citrus dressing! That’s it folks! It doesn’t have to be fancy to be yummy! Also, if you would like you could add in some raw goat cheese! ( I would have done that, but I didn’t have any)

Enjoy!!!!!

~Red Kale leaves chopped

~Sliced oranges or tangerines

~Handful of raw sunflower seeds

~Raw Goat cheese( if you have that)

Dressing:

~1 1/4 cup of fresh squeezed orange juice( 3 oranges juiced)

~1/4 cup of olive oil

~2 tbsp of raw honey

~1 teaspoon of celtic sea salt

~1/2 teaspoon of pepper

~5 cloves of minced fine garlic(fresh is best)

~2 tsp of balsamic vinegar( can add more if you want a kick)

This dressing is very light, and a wonderful change! My whole family enjoyed it!

Place all ingredients in a mason jar with lid, and shake until everything is dispursed. Have I mentioned my love of mason jars!!!!???????? It’s a cooks dream to have a cabinet full of mason jars!! OK, I’m done! Enjoy!!! xoxoxoxoxoxoxoxo
