Quick Lunch

Lunch ideas seem to be the hardest for most people. Coming up with different things to eat for lunch can be tough and eating the same thing can get boring. At lunch we tend to make unnecessary choices on empty calories if your aren’t  prepared. One staple in my kitchen is cooked chicken. You can do so much with chicken, and one thing we do often in our house is make chicken salad. Here is an example lunch I made in less than 5 minutes. It’s filling and filled with great nutrition. You can also make a bunch and eat it throughout the week. 

~1 cooked chicken breast( I used chicken from my salsa chicken recipe the other night) 

~2 celery stalks chopped in small bits

~4 long carrots chopped 

~1 pepper chopped

~2 pieces of green leaf lettuce

~1/4 cup of finely chopped red onion

~ 2 tbsp of homemade mayo( recipe coming soon) You may also use blended fresh avocado for a mayo option( recipe coming for that too!!)

~1 tsp of maple syrup

~you may also add pickles

~1/2 of a avocado

Mix all of the ingredients together and poof! You’re done! 🙂

I usually eat this over a salad, but today I had it on a ezekiel wrap. I also added some fresh fermented sauerkraut. I like to add fermented foods to our meals. It’s important to take care of our inner ecosystem! It’s also delicious!! I promise!
