
There is nothing I love more than coffee… ok I love my family and friends more than coffee, but seriously this stuff is liquid happiness!!! Makes you feel all warm and fuzzy. It makes you want to curl up on the couch… and read a good book by a cozy fire. Ok I’m done with my coffee rant. HA!
Here is a healthier option of a pumpkin Iced coffee. You really can’t go wrong and can play with the ingredients.
~1 cup of unsweetened coconut milk or 1/4 to 1/3 cup of pastured cream( depends on the amount of cream you prefer)
~1 cup of strongly brewed organic espresso
~1/3 cup of organic pumpkin puree
~ 1 teaspoon or more of grade B maple syrup( this really depends on the amount of sweetness you like with your coffee heaven…you can also play with coconut sugar. It’s a great sweetener as well
~Pumpkin pie spice mixed within to taste:)
Also in the picture below is the brand espresso I love. I make a strong batch of this in a regular drip coffee maker and then store in a half gallon mason jar to have throughout the week. It’s so simple and very good!
