
I could eat salad for every meal. There are so many variations, almost anyone can customize one to their liking. This one is one of my favorites! I love fresh strawberries added in a salad:) Nothing is more refreshing and delicious. Hope you enjoy!!
I will give you the recipe to feed a group of people. I am not good at cooking for small groups! I’m Italian .. what can I say!! ๐
~1 head of organic iceberg-chopped fine ~ I always add some iceberg to a salad when I’m looking for some extra crunch. A lot of people are scared of greens when it comes to salad. I love all greens, but this is simply not the case with everyone. It’s easier to eat them when you mix it with some iceberg. Try this trick.. I bet you’ll eat more greens that way:)) This is also a trick I use with my kids.
~1 head of fresh chopped green leaf lettuce or romaine-chopped fine
~1/2 of a large red onion- diced fine
~a dozen fresh organic strawberries diced
~3/4 cup of sliced almonds( if you have a nut allergy you may add sunflower seeds instead)
~1 cucumber
~salt and pepper to taste
~feta or goat cheese~raw preferably (if you are 100% dairy free, leave out)
DRESSING~ you have two options depending on what you like:) I usually mix the two and it’s heaven in your mouth… seriously! ๐
Homemade Ranch~ Put all ingredients in a glass mason jar. Shake and you are done:) Also, I am not one to measure when it comes to dressings. Play with the ingredients, and let your inner foodie come out:))LOL Below is the measurements best to my knowledge:)
~1 cup of pastured sour cream ~ 1/2 cup of almond milk(you may add as little or as much liquid as you like, depending on how thick you like dressing:) ~1 tsp. of onion powder, garlic powder, oregano, parsley, basil, salt and pepper. 1 tbsp of Dill.
Mix both kinds of lettuce in a large bowl. Add all of the fixings. Sprinkle dressing and mix well. Enjoy and happy Summer!!! xoxoxoxox
