This is so darn good, and my kids loved it!!! You can do so much with fried eggplant. You can dip it with a yummy sauce, or have it as the main dish with a meat sauce and salad. Eggplant is so filling and nutritious. I hope you enjoy it!! xo
Thinly slice 1 large eggplant in thin circles( Like picture) Preheat oven to 300
Bowl 1~
Whisk 3 to 4 eggs( depending on how big your eggplant is)
Bowl 2 ~
1/2 cup of arrowroot powder, salt and pepper~ mix well
Bowl 3 ~
1/2 cup of coconut flour
1/2 teaspoon of salt
1/2 teaspoon of paprika
1 teaspoon of onion powder
1 teaspoon of garlic powder
1 teaspoon of basil
1 teaspoon of oregano
1/4 cup of parm cheese(optional)
1. Dip a piece of eggplant in egg mixture
2. Proceed to dip both sides in Bowl # 2
3. Dip again in egg mixture
4. Dip both sides of eggplant in Bowl # 3
Place Expeller pressed coconut oil in a large skillet. Brown both sides of eggplant like in picture. I cooked each side about two minutes on medium heat. I also cooked about six pieces at a time. Once all pieces are cooked, place in oven an additional 10 minutes. ! Yum!
I made my own ranch dressing using Pastured sour cream, dill, onion, garlic and basil. It’s not something we eat everyday, but LORD GOD is it heaven!!!! I will post that recipe soon!!
