Mexican Rice Casserole

This dish is super easy! I’m the queen of goulash! I love trying new spices and making similar dishes taste completely different. Enjoy!! xo

~ 2 pounds of Ground Turkey( can use ground beef)

~1 yellow onion diced fine

~3 gloves of minced garlic

~ 6-7 long stemmed carrots chopped in small bits

~ 4 Collard Green leaves- chopped in small bits

~ 1 large red pepper

~4 tbsp of Taco Seasoning

1/3 cup of  Coconut Aminos

~2 tbsp of grass fed butter or coconut oil( expeller pressed)

~juice of two limes

~2 cups of brown rice

Place onion, garlic and butter in large dish over stove. Let onion and garlic cook for about 2-3 minutes with 1 tbsp of butter. Once that is done, add either ground turkey or ground beef to skillet. Let meat cook all the way. While the meat is cooking, cook your brown rice and place aside. Once meat is done cooking add all of your chopped veggies. Once veggies are cooked all the way add homemade Taco Seasoning. You can add as much as you like to taste. Then add coconut Aminos( if you do not have this, it is fine to leave out…. but it’s so good so I recommend buying some!!) Also add the juice of two limes. Once this is done let food simmer on low for about 10 minutes! Add the rice to the veggies and meat. Mix well and serve over salad, in a taco, or buy itself!  OOOOHHHHH SOOOOOOO GOOOOOD! 

ps. We like our goulash moist so if you need to add more butter or fat feel free to make it the texture of your choice 🙂
