
Lemon Rosemary chicken and veggies.
A friend shared this recipe with me and I’m so glad she did! This was delicious !!!!! So simple and you could easily play with the veggies you add! Enjoy!
1/4 cup of coconut oil
4 chx Breasts…
2 whole sweet potatoes
1 large zucchini
1 large lemon squeezed
1 large lemon sliced
2 tablespoons of rosemary
5 cloves of garlic, minced/chopped
salt and pepper to taste
Preheat oven to 450
In a cast iron skillet or roasting pan add coconut oil. Place Chicken Breasts side down in pan. Add salt and pepper. Then add cubed sweet potatoes and zucchini and cook 8/10 minutes until chicken is brown.
Turn Chicken over and pour Lemon Juice, Rosemary and garlic all over the chicken, potatoes and zucchini. Then top off with sliced lemons.
Bake @ 450 for 40-45 minutes.
