
Now we all have heard of this mystery drink. Some are rather scared of it but let me tell you, once you make it, and flavor it to your liking, it will be out of this world! Kombucha is a drink made out of tea, sugar, a symbiotic colony of bacteria, and yeast. This bacteria is called a scoby. The scoby feeds on the sugar and tea to produce not only acetic and lactic acid, but small amounts of a detoxifying substance called glucuronic acid. This is normally produced in the liver to help neutralize toxins in the body; whether these toxins are produced in body, or ingested in the foods and water we drink. We are overloaded with toxins every day, and this is known to help fight and aid these stressors. Kombucha is a powerful aid in the body’s natural cleansing process, a boost in the immune system, and proven to help fight against cancer and other degenerative diseases! Here is what you will need:
Scoby
Two cups of Starter Tea
Organic Black Tea
Organic Green Tea
Organic Raw Cane Sugar
Filtered Water
Optional –(Fruit for second fermemt)
Paper towel or cheese cloth
Directions Step 1: Boil 13 Cups of water in a large Pan. Once boiled pour Hot water into a Gallon Glass Container. Add 1 cup of Sugar, 6 Black Tea Bags, 2 Green Tea Bags. Place Paper towel or cheese cloth to cover until cool. You must wait until the tea is at room temperature for your next step.
Directions Step 2: Once Tea is at room temperature you will remove tea bags and throw them out. You will now add room temperature starter tea. You will need two cups of starter Tea added to the tea you made. Once you add that you will gently place the scoby in your gallon glass mason Jar. Once you do this, you will place a paper towel or cheesecloth around top with something to hold it down.
Directions Step 3: You are done!! Now place the Kombucha in a room temperature place where it will not be disturbed. Go to your calendar, and mark what time of day it is, and then count eight days from there. The Kombucha will ferment for eight days and be done on that eighth day.
Directions Step Four:
After your Kombucha is done we need to store your scoby until you make your next batch. So in a glass mason jar, add two cups of the kombucha and add your scoby. Place it in the fridge to store. You will notice everytime you make a batch of Kombucha your scoby will make another baby scoby.. You can either share this scoby with friends, or store in your fridge, or throw it out. SAD!!!! For every scoby you store, it’s safe to add two cups of kombucha( so you can use this to start a next batch)
Directions Step 5. – Fruit Ferment. I will use strawberries for this example. Take all of your leftover kombucha and place it in half gallon Mason Jars. Add Fresh or Frozen Strawberries ( about two heaping cups full) Cover with plastic screw on lid, and let ferment for two more days. Once this is done you are now ready to drink your lovely life changing Kombucha!!!!! :)))
