This recipe I threw together with no planning, and it turned out amazing! I love it when that happens!!! If you do not have a slow cooker, you need to invest in one! All I did was throw all the ingredients in the crock pot, and dinner was done! This is my favorite Crock Pot. It’s stainless steal, and so versatile! My sweet mother, and father in law gave this to me as a gift, and I use it for everything. It is also a pressure cooker, and I cannot rave enough about this thing!!!
Ok, back to this yummy soup!
~2 lbs of Italian seasoned Ground Chicken( you can use Italian sausage or ground pork too)
~1 qt of chicken stock (32 ounces)
~3 cloves of garlic minced
~1/2 of large yellow onion chopped
~2 large sweet potatoes
~5 collard green leaves( take greens off the stem)
~2 red pepper( or yellow, and orange)
~1 tsp of celtic sea salt
~1/2 tsp of pepper
~ 4 tbsp of grass fed butter
Place ground chicken, butter, and sweet potatoes in crock pot. Once the meat has finished cooking, and the sweet potatoes have turned to mush, add everything else but collard greens, and peppers. One hour before dinner, add the peppers, and collard greens to crock pot. Cook until veggies are done:)
The sweet potatoes will turn into a broth and blend with the chicken stock. You want this as it creates a wonderful thick creamy broth! Enjoy! This soup is amazing!!! VERY KID friendly!
Also, if you need to place all the ingredients at once, (because you are busy, and gone for the day) that is fine too. The veggies will be a little mushy, but it will still taste amazing!!
