Homemade Chicken Stock aka Bone Broth

Homemade Chicken Stock aka Bone BrothChicken stock is the secret to many recipes. Not only is it packed with flavor it is FILLED with tons of nutrition and healthy benefits. It is packed full of minerals easily absorbed by our bodies, and the gelatin in the bones is essential for proper gut health.
1 Whole free-range pastured Chicken
4 quarts of filtered water
2 tbsp of Apple cider vinegar
1 large onion, chopped
4 cloves of garlic chopped
4-5 carrots chopped
4-5 celery sticks chopped
1 bunch of celery
1 tsp of celtic sea salt
1 tbsp. of cracked black pepper
2 bay leaves
rosemary/thyme optional
Place whole chicken in a large stainless steel pot with water, vinegar and all the vegetables except parsley. Let it stand 30 min to an hour. Bring all ingredients to a boil, and then remove scum that rises to the top. Reduce heat, cover and simmer for 6 to 24 hours. The longer you cook the chicken stock , the richer and more flavorful it will be. About 10 minutes before finishing add the fresh parsley. This will add additional mineral ions to the broth.
In the midst of everything simmering, your chicken meat will finish cooking. Remove the chicken off of the bones and use for whatever you like. Place bones back into stock to continue the simmering process.
You may also cook a whole chicken in the oven first, remove bones, and start the process from there. Once stock is done simmering strain the broth and store in refrigerator up to two weeks or freezer for 6 months.
