This small dish is so simple and so easy to prepare. You can add any veggies you like. My kids love this so I tend to make it many different ways. Today, I used what I had and made the best of it.
~ 2 whole cucumbers diced- you can leave the skin.. do what you prefer
~ 1 cup 0f carrots chopped or sliced like picture
~ 1/4 cup of yellow or red onion
~ 1/3 cup of feta cheese( you may leave this out if you are dairy free) I love it both ways and when I’m craving cheese this is a nice twist
~ 1/2 cup of red wine vinegar dressing-
(3 cloves of garlic minced, 1/2 cup of red wine vinegar, 1/2 cup of olive oil, salt and pepper to taste)
~ You may add more salt and pepper to taste. You may also add more red wine vinegar if you prefer a more tart flavor.
1. Place all of the ingredients in a container.
2. Stir or shake with dressing and poof you’re done:)
I usually add peppers and avocado but this is what I had. You may also throw it over Lettuce.
