
Mashed Cauliflower replaces mashed potatoes. Serve with Steak or Grilled Chicken/whole Chicken.
Cut up Carrots, green beans and zucchini. Chop a yellow onion and garlic. Sauté all the veggie…s with expeller pressed coconut oil or pastured butter. Add salt and pepper to taste. In a separate pot steam a whole cauliflower until you can stick a fork in it easily. After it is done add pastured butter and garlic salt. You can use a mixer to get it to the consistency of mashed potatoes, but if you like it chunky it’s just as good. When I want to be bad I even add some Organic sour cream. YUM!
