Easy Leftover Chicken Salad

This is my favorite go to meal for lunches. I usually make this when I make a whole chx for dinner. Cut up Leftover chx and  add some veggies. What I love about Chicken Salad is how easy it is to travel with because it’s eaten cold! We usually eat ours over a salad or by itself.

Ingredients:

Chicken

carrots

celery

dill pickles-optional

red onion

soy free veginaise or homemade mayo(recipe coming soon)

maple syrup

cut up grapes or raisins- optional

walnuts- optional

cut up spinach or swiss chard

Directions: Use leftover Chicken from whole chicken or boil boneless chicken breasts. Chop up Onion, celery, carrots, pickles, spinach or swiss chard. Add about 1  cup of  mayo/veginaise. Add maple syrup to the sweetness you desire. Start off little. Add raisins or cut up grapes. Mix all together and it’s done:)
