Here is one of my many variations of chili. You can change this up and use whatever veggies you have in the fridge really. I will sometimes add purple cabbage, yellow squash and even carrots. Today I used what I have and it turned out great! Enjoy
3 15 oz cans of organic tomato sauce
3 cups of diced baby bell peppers
1 whole diced zuchini
6-7 kale or swiss chard leaves diced fine in small pieces(remove all stems)
2 pounds of grass fed ground beef
1 15 oz can of organic corn (optional)
2 1/2 tbsp of chili powder
2 tbsp of cumin
2 tbsp of oregano
1/4 cup of coconut aminos
2 cloves of garlic
1 whole medium sized onion
Brown ground beef with diced onion and chopped garlic. Strain fat and add all other ingredients and spices. Let simmer all day on med/low… Serve with Paleo biscuits!
