
I love Chicken Pot Pie! It’s one of my favorite dishes. It’s so easy and a great way to get veggies in for the kids. I usually make my own crust but I was feeling lazy, so I just bought a gluten free crust to make it easy on myself. When buying gluten free you want to make sure you aren’t buying any hidden fillers or GMO ingredients(more on that coming soon)
I made two pies. The i…ngredients below is filling for two
For the filling:
~2 boneless skinless chicken breasts
~1 bag of frozen mixture of organic carrots, green beans, peas and corn( I used this mixture because I didn’t have enough fresh veggies for two… if you are in a pinch by two of these and leave out some of the ingredients below)
~2 whole potatoes cut up into small cubes
~1/2 pound of green beans cut into inch pieces
~5 more long carrots chopped
~5 sticks of chopped celery
~1/2 large yellow onion finely minced
~3 large pieces of Kale- remove stems and cut into fine pieces
~1 cup of pastured cream/raw milk or almond milk
~ a splash of chicken broth if needed
~3/4 stick of pastured butter
~1 tbsp of coconut oil ( expeller pressed)
~1 tsp of Salt or a little more to taste
~1 tsp of pepper
~1 tsp of rosemary
~1 tsp of dried parsley
~1 tsp of Arrowroot Powder
Place butter and onions in a skillet. Brown until onion is a golden. Add all your veggies and cook on med/low. As your veggies are cooking… brown your chicken in a skillet with coconut oil. Once chicken is done cooking cut into cubes and pour the chicken/coconut oil in pan into veggie mixture. You want it to be nice a creamy so if you need to add more cream or chicken broth that is fine. After mixing everything add the arrowroot. Mix well. You are now ready to place filling in pie crusts.
I baked my pie crust for 10 minutes @ 375 without filling. Once done I filled veggie/chicken mixture within and baked at 400 for 40 minutes. Let cool 5-10 minutes. It’s delicious!!!!!! xo
