Chicken Masala
I have been exploring some new recipes and this dish is so simple and easy to make! I LOVE crockpot meals! So easy to prepare in the morning and serve after a jam packed day!

1/2 cup of raw cashews
2 1/2 pounds of boneless, skinless chicken thighs cut into cubes
2 cups of tomato puree
1 yellow onion chopped
2 cloves of minced garlic
2 1/2 tablespoons of garam masala or All spice
2 teaspoons of sea salt
1 teaspoon of ground ginger
1/2 teaspoon of paprika
1 handful of fresh cilantro for garnish
You can add any veggies

1-2 heads of cauliflower or soaked brown rice(if you don’t like the flavor of cauliflower)

Place the cashews in a bowl and cover with water/ set aside.
Place all the ingredients in a slow cooker for 6 hours on low ( except the cilantro) Mix well
When the chicken is just about done cooking drain the cashews and add them to the blender with about 1/4 cup of water.. blend until it’s a nice creamy texture. Add the cashew mixture to chicken dish right before serving and garnish with cilantro. Serve with a side salad:)

Cauliflower mash- steam the cauliflower until you can stick a fork within. Mash and add pastured butter, salt, lime and fresh cilantro. So good!!! Great grain free substitute!
