
1/2 of a yellow onion
3 cloves of chopped or minced garlic
…3 Large sweet potatoes diced
1 large yellow pepper
1 large red pepper
1 bushel of baby broccoli
1 zucchini
Celtic sea salt to taste
pepper
drizzle olive oil or Expeller pressed coconut oil to make veggies moist
top off with grass fed butter
Bake @ 400 for an hour:) You can play and cook any veggie this way if you prefer others:) This is what I had in the fridge so I chose these.. I always change it up:) If you are not a veggie person still try it…. you might surprise yourself!! xo
