This is by far one of my favorite meals! It’s so simple to throw in the crockpot and filled with wonderful flavors!

~2 pounds of boneless chicken thighs
~1/3 cup of coconut aminos
~1/3 cup of tomato sauce
~2 tbsp of apple cider vinegar
~1/3 cup of maple syrup or honey
~2 tsp of sesame oil
~2/3 cloves of garlic minced
~ 1/3 cup of minced yellow onion or shallot
~1 tsp of gingerGarnish with sesame seeds and sliced green onions!
Place all ingredients in a crockpot / cook on low 6-8 hours or high 4-6 hours.
Serve over brown rice and add whatever veggie you like. I sautéed long stem broccoli and yellow squash with a little onion and pastured butter! Delicious!!!! Xoxo
